Not only have mushrooms been considered a delicacy of nature since ancient times, but they have been celebrated for thousands of years for their health benefits: fat free, cholesterol free, gluten free, low in calories, low in sodium, and rich in the important minerals such as selenium, ergothioneine, copper, potassium as well as vitamins B and D
On the special menu, classic regional dishes will include the Porcini or Cep with its intense meaty flavour, the lesser known mildly nutty Pied de Mouton, the peppery Chanterelle, the Girolle with its distinctive yellow colour and funnel-shaped cap and the Black Trumpet, harder to find.
