Alquimia opens in the Putney Wharf development
Opening in early April 2013, Alquimia (Spanish for alchemy) will be bringing Spanish cuisine to SW15 with a 138 cover restaurant (90 inside, 48 outside).
Located in the Putney Wharf complex, Alquimia is the brain child of three Spanish chefs. Head Chef Sergio Ferrari Perez, a graduate of the cuisine School Luis Abeijon, Guadalajara, has worked at several fine dining and Michelin starred restaurants including Martín Berasategui’s 3 starred establishment in Lasarte-Oria. He was awarded 1st prize in the world contest of pinchos Arzak d’Or, Guipuzcoa in 2007.
Under Sergio is Jose Segura Hernandez, trained in Barcelona, where he part owns restaurant La Llar Nostra and was chef at Cambio de Tercio in London. Adolfo Garri Canales, who also trained in Spain and has worked in his home country as well as the UK, completes the senior team at the stove.
The chefs will be producing Spanish tapas and various regional dishes. The emphasis will be on quality and beautiful presentation. With tapas dishes starting from £5.25 and mains between £15.45 and £21.50 the menu is aimed at families and groups sharing in the traditional Iberian style.
Signature dishes will include Rabo De Toro (caramelised ox tail) and Chorizo a la Sidra (Chorizo cooked in Spanish cider) as well as classic Spanish favourites like Serrano ham croquettes, salt cod (bacalao) with squid-ink blackened rice.
Wines will all have a Spanish Protected Denomination of Origin status with a red, white and Cava list. There will also be a handpicked Sherry menu- matched specifically with the food- which will include Fino, Manzanilla, Oloroso and dessert varieties.
A large alfresco space will make the restaurant a prime spot on the river and close to Putney Bridge. Inside the large dining area will seat 90 people and have a private area for 30, available for functions and private parties. There will also be a bar serving cocktails and aperitifs from the drinks list.
Chef Owner Adolfo Garri Canales said ‘We wanted to create a restaurant where families and groups can enjoy the best of Spanish cuisine. The location and the space make it a perfect place to relax and enjoy a meal with friends whilst eating some of the best tapas in town. We are really proud of what we have created and hope introduce London to our traditional food and wine.’
