Catch the grouse whilst you can - only available for a two week period
This year The Glorious 12th fell on Monday 13th as it is illegal to shoot game birds on a Sunday in England.
The grouse population has been badly affected this year due to the harsh winter and boiling summer, which has impacted the growth of heather across the moors. The plant,
the grouse's main source of food, was frozen and blasted last winter and baked dry
this summer, so half-starved female birds were in poor condition when they laid their eggs,
and their chicks struggled to find food; as a result, only two thirds of chicks survived.
Many moors have cancelled shooting in order to allow stocks to recover. The shortage
is so serious that shooting may even be curtailed next year.
Our Grouse has been reserved from the Rhug Estate, and will be on the specials for
a fortnight only, commencing on the 21st August. Following this, we will continue
the game season with partridge.

Roast grouse breasts, confit legs,peverada, barley and girolle mushroom risotto, fig compote
Head Chef Massimo has taken inspiration from the Veneto region, using the livers of the grouse to make the traditional "peverada" sauce.
The fig compote is another clever touch; a reminder of the Latin origin of the Italian word for liver "figatum" which was so called because of the practice of feeding the geese with figs and honey to fatten them for their liver.
