I have my sister down from the wilds of Leicestershire and she was desperately trying to swerve the frozen cod which I was planing to turn into an obviously amazing dish in which she had little faith !

Frozen cod, if dried out a little in a low oven, although not as good as fresh, makes a wonderful base for a Keralan fish curry. Surprisingly simple to cook with few ingredients.

Just to add that the Nigella recipe online is close to authentic by including tamarind paste.
Indian Zing is a cut above the rest. No cheap though, but worth every penny.
